First time rooting phone - Backup apps?


Im gonna root my samsung Note8. I want to use stock rom but I just want root access.
So Im wondering how to think about backup and restore as I have never done that stuff before.
Do I just backup all the settings and apps I currently have with some app (if so what app?).
Then I just restore everything to the same state after rooting and reinstalling stock firmware? Does that work well because from my experience when reformatting a computer u generally want to setup everything from default again and just save the files basically, but settings no.

Then every time there will be an update for the phone and I want to flash the newest firmware that was released, I just simply backup everything in the current state, apply firmware update, then restore again in the new firmware?

Sorry for newb questions I just want to know if I understand everything correct before I start.. So I dont need to start over and over again after each new flash because setting up phone and all the apps and settings normally takes me like 3-4 hours as Im very privacy oriented and dont want to leak all my info to google and facebook etc..
